Cocoa beans – the basis of every chocolate
The word chocolate comes from the Aztec term xocolatl, which means \"bitter drink\". The first cocoa drinks and cocoa cakes were prepared by the indigenous people of Central America long before the arrival of Europeans. Chocolate reached Europe in the 16th century thanks to the Spaniards and quickly became a popular drink of the nobility. Gradually, the processing technology was improved, and the solid form of chocolate we know today was created.
How dark and milk chocolate are made
Dark chocolate is created by mixing cocoa mass, cocoa butter, and sugar. A small amount of emulsifier is added for the right consistency. In the production of milk chocolate, milk powder and flavorings are also used to provide a milder taste. The chocolate mass is then rolled and refined in several steps, and it is this process that decides the final texture and quality of the product.
What determines the quality of chocolate
High-quality chocolate is characterized by a higher content of cocoa components, which is stated on the packaging. The higher the cocoa content, the more intense the flavor. Real chocolate should contain cocoa butter as the fat.
Correct storage also plays an important role – chocolate products should be kept in a dry place, without exposure to sunlight and at a temperature around 20 °C, to preserve their taste, structure, and aroma.
